He Spoils Me
Came home yesterday with a pound of shrimp, a lemon, and some Parmesan cheese. He had picked a bunch of basil off of the plants in the back and made a pesto with walnuts that we had. I didn't think it would turn out, but I was quite surprised and actually liked it better than pesto with pine nuts. The flavor isn't as potent and it didn't take away from anything else in the dish. You could taste all the individual flavors - shrimp, basil, lemon, and garlic. The thing that took the longest was boiling the noodles.
After having pesto made with walnuts, I don't think I can go back.
Here's the recipe:
Pesto
1 1/2 cup fresh basil
1/4 cup toasted walnuts
2 cloves garlic
squeeze of lemon juice
3 oz. Parmesan
Olive oil
Salt to taste
Pepper to taste
Crushed red pepper to taste
pulse basil and walnuts together first
add Parmesan, lemon, garlic, salt, pepper, and olive oil
pulse a few more times, determine consistency
add more olive oil as necessary
1 lb. shrimp (cooked)
Your choice/portion size of noodle
mix together
